Tips to Make Taste & Aromatic Gulab Jamun that nobody will tell you

Every time we go out to an Indian Restaurant, after finishing the main course, everybody is like, “Order something sweet”. After a long discussion of what to order, it is said that “East or West, Gulab Jamuns are the best”.

Ingredients:

  • Sugar

  • Green Cardamom pods

  • Water

  • Lemon Juice

  • Milk Powder

  • Maida (all-purpose flour)

  • Baking Soda

  • Ghee

  • Milk

  • Oil

Instructions:

Step 1: Prepare Chashni

Take 1 bowl of Sugar, 3 Green Cardamom Pods, 1 lemon and half a cup of water. Put everything together and heat together on medium flame. Make sure you are stirring it occasionally. Cook it until it reaches the string creating consistency.

Step 2: Put the Gulab Jamun Containing ingredients together

Add milk powder, maida, baking soda in a wide-mouthed bowl. Mix everything with a spoon and then add a tablespoon of ghee.

Step 3: Knead a Soft Mixture

Make sure to sprinkle three to four tablespoons of milk over the mixture, then gently mix everything.

Remember, Do Not!

Do not knead the mixture, just lightly mix it.

What if I knead it?

If you do so, then the Gluten will be formed which will not absorb the Sugar Syrup.

Step 4: It’s Your Favourite time: Give a round shape to the mixture

Divide the mixture in the equal diameters of the balls, then grease your palms. Give a round shape to each ball. No ball should experience the cracks. If it experiences so, then it signals that the mixture is still dry and you must add a teaspoon of milk to it.

Tip

The chefs of the Best Indian Restaurant have shared this Masterchef’s Tip, “ Do not create the large balls, As after frying and the absorption of the sugar syrup, their size will become doubled.”

Step 5: Frying Time

Heat the ghee or the oil in a deep-bottomed cauldron. Add no more than 3 to 4 balls in the heated oil. If you add more than none will get the right amount of heat. Deep fry them for about 6 to 7 minutes. The right indication about when to stop cooking is the color of the Gulab Jamun. When they come out to be golden brown then take them out from the cauldron.

Tip

Deep fry over slow flame. If you choose to deep fry them on high flame, then the Gulab Jamuns will not get properly cooked.

Step 6: Combine Everything Together

Heat the Sugar Syrup for about 3 to 4 minutes. Add the deep-fried gulab jamuns balls to the sugar syrup.

Now Here Are Some Of The Pro-Tips:

  • Be time-efficient

If you want to save your cooking time, then keep the oil in the cauldron to be heated at the time when you have started making the balls.

  • What if I overcook the sugar syrup?

If you overcook the sugar syrup, it will turn hard and would not be an ideal syrup for putting the gulab jamuns. If that happens by mistake, then add some water to it, cook again for a few minutes. But yes, keep on stirring it.

Garlic Naan: Make It Easy With The Ingredients Available In The Kitchen

Who has not heard of the Garlic Naan? All of us might not have eaten it, but we have heard about it a lot. It is an Indian dish, which has the potential of delighting your taste buds in the way that none dish can. Right?

Grand Pavilion, the most visited Indian restaurant which is famous in Terrigal and Sydney for its special menu always runs short of Garlic Naan, since each customer demands it and keeps on ordering it again and again until they are full till neck.

We have dedicated today’s blog to all the Naan-Lovers.

When we like a particular dish, we are willing to know its recipe irrespective of whether we have stepped into the kitchen or not. LOL!

RECIPE – GARLIC NAAN

Step 1: Prepare The Dough

Measure 3.25 cups of all-purpose flour. Put it in a big bowl. Now add 1 teaspoon of salt and whisk both the items nicely. Keep a stand mixer on a standby mode and use it when you put the following items consecutively:

    • Lukewarm Water
    • Sugar
    • Yeast

Allow it to bloom for 7 to 10 minutes.

Step 2: Prepare One More Mixture

Once you find out that the yeast has gotten activated then add the following in a bowl:

    • Lukewarm Milk
    • Yoghurt
    • Oil

Once these have gotten mixed nicely, sift the flour mixture into this bowl.

Step 3: Put The Main Ingredient – Garlic

Add the grated garlic. Or you can use garlic paste as well. Start adding the flour alongside – 1 tablespoon at a time. Keep on adding it until the dough achieves a nice consistency.

Step 4: Let The Dough Rest

In the end, knead the dough with your hands. Once it comes out to be softened, then transfer it to a greased bowl. Allow it to rest for 1 to 1.5 hours. Make sure you have covered with the kitchen towel.

Step 5: Division Of The Dough

After the required time has passed, the dough is ready to be used. Punch the dough to release the air. Make sure you are dividing it into 8 equal parts.

Step 6: Prepare The Flavour Enhancing Butter Garlic Mix

Heat a pan to melt the butter. Then add minced garlic & chopped cilantro to it. Make sure you are keeping this mix ready to brush the naan with this.

Step 7: Heat The Iron Skillet

Make sure you are using the iron skillet to prepare the naan. It should be heated at medium-high heat.

Roll a dough bowl until it achieves a nice oval shape. It should be 10 to 11 inches long and 6 to 7 inches wide. Stretch it lengthwise with the help of a roller.

Step 8: Cook Your Naan

Now transfer the naan to the heated iron skillet. Do not turn it over until you see the bubbles on the top of it. Before turning, brush the naan with the garlic butter mix.

Step 9: Cook Directly On The Gas

To bring out the nice smoky flavour, cook the naan directly on the flame. Do not stretch this step for more than 15 to 20 seconds.
