  • Garlic, ginger and green chillies. These are for the aroma, heat and spiciness.
  • Spices like turmeric, cumin, coriander powder, chilli powder, garam masala and coriander leaves. These are for the colour, depth and earthy flavour.

The recipe

    • Start by heating oil in a pan over medium heat.
    • Fry chopped onions in a pan until they turn golden brown. Then, add the chopped garlic and ginger. Cook them for a minute or two.
    • Add all the spices in small quantities.
    • Add chopped tomatoes to the mixture. Cook until they’re soft and thick.
    • Add the cooked or canned chickpeas to the mixture and keep it on low heat. Let it simmer for ten to fifteen minutes so that the chickpeas absorb the other flavours. 
    • You can add some water if needed in order to achieve the desired thickness.
    • When done serving, sprinkle some coriander leaves on top of the chana masala.
